St. Patrick’s Day is a big deal in the United States, especially on the east coast (lots of Irish immigrants way back when) so getting anything green in the run up to March 17th is easy. Any bagel store worth its weight in bagels offers green bagels on pre-order.

We would like to offer a recipe for chocolate chip mint frosting cupcakes because they are delicious. Not sickly sweet but a whole lot of semi-sweet chocolate minty goodness. The cupcake version of After Eight Dinner mints.

You can find the recipe at Sally’s baking addiction.  Even though Sally rambles a bit about her cupcakes, the recipe comes up eventually and the results are quite delightful. In fact, we may have eaten too many.
